Minestrone Soup

Serves 4
Syns Per Serving : Extra Easy and Green - Syn-free
Ingredients
• 1pk Asda vegetable soup mix (or you could use any other ready prepared diced veg soup mix)
• garlic granules
• 60gm small dried pasta shapes (I used spaghetti snapped into 2 cm pieces)
• 1ltr vegetable stock
• 1 carton passata
• 300gm can cannellini beans, drained
• a pinch of granulated sweetener
freshly ground black pepper
• freshly chopped basil (I used frozen)
Method
1. Put the veg soup mix, garlic granules, pasta and stock into a large pan. Bring to the boil, cover and simmer for 15 minutes.
2. Stir in the remaining ingredients,  simmer for 5 minutes and serve.

Garlic Chicken Lasagne

Serves 4
Syns Per Serving : Extra Easy - Syn-free**
**add 6 Syns per serving if not using the cheeses as your Healthy Extra A choice
Ingredients
• Fry Light
• 1 medium onion, finely chopped
• 3 garlic cloves, crushed
• 350gm skinless chicken breast, finely chopped
• 400gm can chopped tomatoes
• 1tsp dried oregano
• black pepper
• 6 dried lasagne sheets
For the cheese sauce
• 150gm Philadelphia Light (2 x HEA or 12 Syns)**
• 80gm reduced-fat cheddar (2 x HEA or 12 Syns)**
• 100ml hot vegetable stock
• grated nutmeg
Method
1. Preheat oven to gas mark 5.
2. Heat a large pan sprayed with Fry Light and cook the onion and garlic for 5 minutes, stirring occasionally, until starting to soften.
3. Add the chicken and cook, stirring occasionally, for a further 5 minutes. Add the tomatoes, oregano and seasoning. Bring to the boil, reduce the heat and simmer for 5 minutes.
4. Meanwhile, make the cheese sauce by placing the Philadelphia Light, vegetable stock, nutmeg and half of the cheddar into a small pan and heating gently, stirring constantly, until the Philadelphia has melted.
5. Spoon half of the chicken mixture into an ovenproof dish and top with 3 sheets of lasagne, breaking the sheets up to fit if necessary. Repeat the layers.
6. Pour the cheese sauce over the top of the lasagne and sprinkle over the remaining cheese. Transfer the dish to the oven and bake for 30 minutes until the topping is golden brown. Serve with Syn-free potato wedges and a large mixed salad.

Beef And Mixed Bean Chilli

Serves 4
Syns Per Serving : Extra Easy - Syn-free
Ingredients
• Fry Light
• 1 onion, peeled and finely chopped
• 3 garlic cloves, peeled and finely chopped
• 2tsp cayenne pepper or paprika
• 1tsp ground cinnamon
• 2tbsp ground cumin
• 2tsp chilli powder (or more to taste if you like it hot)
• 500gm extra lean minced beef
• 400gm can chopped tomatoes
• 1 red and 1 yellow pepper, deseeded and cut into small bite-sized pieces
• freshly ground black pepper
• 400gm red kidney beans in water, drained and rinsed
• 400gm can mixed beans in tomato sauce
Method
1. Place a large, non-stick frying pan sprayed with Fry Light over a medium heat. Add the onion and garlic and stir-fry for 1-2 minutes. Add the cayenne pepper or paprika, cinnamon, cumin, chilli powder and minced beef and stir-fry for 5-6 minutes.
2. Add the tomatoes and peppers and bring to the boil. Season well, cover tightly and cook over a low heat for 20-25 minutes.
3. Add the beans, stir to mix well and return to the heat for another 10 minutes. Serve in warmed bowls with boiled rice or Syn-free potato wedges and a large mixed salad.

Oven Baked Breaded Chicken Burgers

These tasty burgers are delicious topped with a cheese slice taken as part of your Healthy Extra A choice.
Serves 4
Syns Per Serving : Syn-free**
**add 3 Syns per serving if not using the breadcrumbs as part of your Healthy Extra B choice
Ingredients
• Fry Light
• 1lb minced chicken breast
• 1/4tsp garlic powder
• 1/4tsp onion granules
• freshly ground black pepper
• 120gm wholemeal breadcrumbs**
Method
1. Preheat the oven to gas mark 6. Spray an oven tray with Fry Light and Preheat in the oven.
2. In a large bowl, mix the chicken mince with the seasonings and half of the breadcrumbs. Mix well (the mixture will be quite wet and sticky at this point but don't worry, that's normal!).
3. Spread the other half of the breadcrumbs out on a large plate. Divide the mixture into four portions and shape each portion into a burger shape (the Lakeland Burger Maker is ideal for this job). Roll each burger in the breadcrumbs until well coated.
4. Place the coated burgers onto the preheated oven tray and cook in the oven for 25-30 minutes until golden brown and cooked through.

Chicken And Green Pepper In Black Bean Sauce

Serves 4
Syns Per Serving : Extra Easy and Original - 0.5 Syns
Ingredients
• Fry Light
• 4 x skinless, boneless chicken breast fillets, cut into bite size pieces
• 1 large green pepper, deseeded and cut into chunks
• 1 large onion, peeled and cut into chunks
For the sauce
• 1 x 400gm can black beans, drained and rinsed
• 2 garlic cloves, crushed
• 350ml chicken stock
• 4tbsp dark soy sauce
• 4tbsp rice vinegar
• 4tsp granulated sweetener
• 2tsp cornflour (2 Syns)
Method
1. To make the black bean sauce, heat a saucepan sprayed with Fry Light and stir-fry the garlic and black beans for about 30 seconds. Add the remaining sauce ingredients, bring to the boil and then simmer, stirring for a couple of minutes until the sauce thickens.
2. Meanwhile, spray a wok with Fry Light and place over a high heat. Stir-fry the chicken for 4-5 minutes until browned all over. Add the onion and green pepper and stir-fry for 2-3 minutes. Add the black bean sauce to the wok, stir well to coat everything and then reduce the heat. Simmer for a minute or two until the chicken is cooked through. Serve over a bed of boiled rice or noodles, remembering to count the Syns if following the Original plan.

Burger In A Bowl

This recipe is delicious topped with a Healthy Extra serving of cheese of your choice.
Serves 4
Syns Per Serving : Extra Easy and Original - 1 Syn

Ingredients
• Fry Light
• 500gm extra lean minced beef
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• freshly ground black pepper
• 1 iceberg lettuce, roughly shredded
• pickled sliced gherkins
• 1 small red onion, finely chopped
• cherry tomatoes
For the SW Super Sauce
• 3 level tbsp lighter than light mayonnaise (1.5 Syns)
• 5tbsp fat free fromage frais
• 1 level tbsp American-style mustard (1.5 Syns)
• 2tbsp tomato puree
• 2tsp white wine vinegar
• 1/2tsp garlic salt
• 1/4tsp onion granules
• 1/4tsp sweet smoked paprika
Method
1. Spray a large, heavy-based non-stick frying pan with Fry Light and place over a high heat. Add the beef, onion and garlic and stir-fry for 6-7 minutes or until the beef is cooked through and the onions have softened. Season well.
2. Meanwhile, put all the SW super sauce ingredients in a bowl with 4 tablespoons of water and whisk until well combined.
3. Mix together the lettuce, gherkins, onions and tomatoes and divide between four wide bowls. Spoon the beef mixture on top, drizzle over the SW super sauce and serve hot.

Hot Mackerel And Potato Salad

Serves 4

Syns Per Serving : Extra Easy - 0.5 Syns

Ingredients
• 1lb 8oz baby new potatoes
• 1 red onion
• 250gm pack of beetroot in natural juice
• 6tbsp fat free natural fromage frais
• 2tbsp freshly chopped dill
• freshly ground black pepper
• 2 x 125gm cans Princes mackerel fillets in mustard sauce (1 Syn)

Method
1. Cook the potatoes in boiling water for 10-12 minutes until tender. Drain well and place in a heatproof bowl.

2. Finely slice the onion. Drain the beetroot and cut into small pieces. Mix together the fromage frais, dill and plenty of black pepper. Lightly flake the mackerel.

3. Stir the onion, beetroot, fromage frais and mackerel into the potatoes and serve immediately.

Spinach And Cottage Cheese Cannelloni

Serves 4
Syns Per Serving : Extra Easy and Green - 1 Syn
Ingredients
• 12 cannelloni tubes
• a few basil leaves, torn
• 2 level tbsp grated Parmesan cheese (3 Syns)
For the filling:
• 300gm fresh spinach, washed
• 300gm very low fat cottage cheese
• freshly grated nutmeg
• 1 egg yolk
• freshly ground black pepper
For the sauce:
• 500ml carton passata
• pinch of granulated sweetener
• 1 garlic clove, crushed
• freshly ground black pepper
Method
1. Make the filling. Put the spinach in a saucepan with 2tbsp of water. Cover with a lid and cook very gently over a low heat for about 5 minutes, until the leaves are limp and bright green. Drain in a colander, pressing down on top of the spinach with a saucer to squeeze out all the liquid.
2. Chop the spinach and mix with the cottage cheese, nutmeg, egg yolk and seasoning. Spoon the filling into the cannelloni tubes and arrange them in an ovenproof dish.
3. Mix the passata, sweetener, garlic and seasoning together and pour over the cannelloni.  Sprinkle with basil and Parmesan cheese, and bake in a preheated oven at 200°C, 400°F, Gas Mark 6 for about 30 minutes, until bubbling and golden brown.

Meatballs In Gravy

Serves 4
Syns Per Serving : Extra Easy and Original - 1 Syn
Ingredients
For the meatballs
• 250gm extra lean minced pork
• 250gm extra lean minced beef
• 1 small onion, very finely chopped
• 1 clove garlic, finely chopped
• 2tsp dried mixed herbs
• freshly ground black pepper
• Fry Light
For the gravy
• Fry Light
• 1 medium onion, finely chopped
• 1tbsp plain flour (3.5 Syns)
• 450ml beef stock made with two stock cubes
• 1tbsp tomato puree
Method
1. Place the beef and pork mince in a large bowl and add the onion, garlic, herbs and black pepper. Mix well. Divide the mixture into 20 portions and roll into small, neat balls.
2. Heat a large frying pan sprayed with Fry Light and fry the meatballs for 6-8 minutes, or until nicely browned on all sides. Roll the meatballs around in the pan as you brown them to prevent them becoming flattened on one side.
3. Meanwhile, to make the gravy, heat a large lidded saucepan sprayed with Fry Light and gently fry the onion over a low heat for 5 minutes, or until softened, stirring regularly.
4. Sprinkle the flour into the pan and stir well. Slowly add the stock and the tomato puree, stirring constantly.
5. Add the meatballs to the gravy and bring to the boil. Reduce the heat, cover the pan with a lid and leave to simmer gently over a low heat for 30 minutes, stirring occasionally.
6. Remove the lid and increase the heat. Boil the gravy for 3-5 minutes or until thickened. Season to taste with freshly ground black pepper and serve.

Sausage Casserole

Serves 4
Syns Per Serving : Extra Easy and Original - 1 Syn
Ingredients
• 8 x Sainsbury's Be Good To Yourself Cumberland sausages (4 Syns)
• Fry Light
• 2 onions, peeled and finely chopped
• 2 garlic cloves, crushed
• 1tsp smoked paprika
• 1 x 400gm can chopped tomatoes
• 400ml chicken stock
• 2tbsp tomato puree
• 1tbsp Worcestershire sauce
• 1tbsp granulated sweetener
• 1tsp dried mixed herbs
• 2 bay leaves
• freshly ground black pepper
Method
1. Preheat the oven to gas mark 5. Cook the sausages in the oven for 20-25 minutes.
2. Meanwhile, spray a large saucepan or flameproof casserole dish with Fry Light and fry the onions gently over a low heat for 5 minutes until starting to soften, stirring regularly.
3. Add the garlic and cook for 2-3 minutes more, stirring frequently.
4. Sprinkle over the smoked paprika and cook together for a few seconds longer.
5. Stir in the tomatoes, chicken stock, tomato puree, Worcestershire sauce, sweetener and herbs. Add the sausages and bring to a simmer, reduce the heat, cover loosely with a lid and leave to simmer very gently for 20 minutes, stirring occasionally.
6. Season to taste with freshly ground black pepper and serve.

All-day Breakfast Quiche

Serves 4
Syns Per Serving : Extra Easy and Original - 1 Syn**
**add 3 Syns per serving if not using the grated cheese as part of your Healthy Extra A choice
Ingredients
• 8 x Sainsbury's Be Good To Yourself Cumberland sausages (4 Syns)
• 1 large onion, finely chopped
• tomato puree
• 250gm tub low fat cottage cheese
• 5 eggs, beaten
• 80gm reduced-fat cheddar, grated**
• freshly ground black pepper
• 1tbsp dried mixed herbs
• sliced tomato
Method
1. Preheat the oven to gas mark 6.
2. Remove the skins from the sausages and use the sausagemeat to line the base of an oven proof dish. Bake in the oven for 15 minutes.
3. Remove from the oven and spread the top of the sausagemeat with the tomato puree. Top this with the onion and half of the grated cheese.
4. Mix the beaten eggs with the cottage cheese, pepper and herbs and carefully pour this mixture over the top of the sausagemeat base. Sprinkle with the remaining grated cheese and top with the sliced tomato.
5. Return to the oven for 30-35 minutes until golden brown and cooked through.
Note: you could also fry off some finely chopped mushrooms in Fry Light and add these at the same time as the onion.

Creamy Mushroom Soup

Serves 4
Syns Per Serving : Syn-free on Extra Easy and Green
Ingredients
• Fry Light
• 2 onions, peeled and finely chopped
• 2 garlic cloves, peeled and finely chopped
• 1 large potato, peeled and cut into 1.5cm dice
• 500gm button or chestnut mushrooms, finely chopped
• 1.5ltrs vegetable stock
• freshly ground black pepper
• 6tbsp very finely chopped fresh curly parsley, plus extra to serve
Method
1. Spray a non-stick saucepan with Fry Light and place over a medium heat. Add the onions, garlic, potato and mushrooms and stir-fry over a high heat for 5-6 minutes.
2. Add the stock and bring to the boil. Cover and cook gently for 15-20 minutes or until the vegetables are tender. Season well.
3. Remove from the heat and stir in the parsley. Using a hand-held blender or food processor, blend the soup until smooth. Serve the soup sprinkled with parsley.

Cheeseburger Frittata

Serves 4
Syns Per Serving : Extra Easy and Original - Syn-free **
**add 4.5 Syns per serving if not using the cheese as part of your Healthy Extra A choice
Ingredients
• Fry Light
• 500gm extra lean minced beef
• 1 large onion, finely chopped
• 1 garlic clove, crushed
• 250gm frozen mixed sliced peppers
• 8 cherry tomatoes, diced
• 120gm reduced-fat cheddar, grated**
• 10 large eggs (I only used 8 medium eggs the first time and it wasn't really eggy enough)
• freshly ground black pepper
Method
1. Preheat the oven to gas mark 6.
2. Spray a large pan with Fry Light and cook the onion and garlic over a low heat for a few minutes until starting to soften. Increase the heat, add the mince and fry for 5-6 minutes until browned all over. Add the peppers and cook for another 2-3 minutes, then add the cherry tomatoes and cook for a minute or so.
3. Spray a large oven dish with Fry Light and spread the mince mixture over the base of the dish (think I will use a bigger dish next time). Beat the eggs and add half of the cheese and some freshly ground black pepper. Pour the egg mixture over the mince mixture, then top with the remaining cheese.
4. Bake in the oven for 15-20 minutes until set and golden brown.

Chilli Meatballs

Serves 4
Syns Per Serving : Extra Easy - Syn-free
Ingredients
For the sauce
• 1 onion, finely chopped
• 1 garlic clove, crushed
• 1 green and 1 red pepper, deseeded and diced (I cheated and used 250gm frozen sliced mixed peppers)
• Fry Light
• 1/2 tsp chilli powder (or more if you like your food spicy)
• 400gm can chopped tomatoes
• 410gm can red kidney beans, drained
• 150ml beef stock
For the meatballs
• 500gm extra lean minced beef
• 1 onion, finely chopped
• 1 egg, beaten
• freshly ground black pepper
• Fry Light
Method
1. Fry the onion, garlic and peppers in Fry Light for 5 minutes until the onion is golden and starting to soften. Add the chilli powder, tomatoes, kidney beans and stock. Simmer uncovered for 10 minutes.
2. Meanwhile, put all the meatball ingredients into a large bowl and mix well. With damp hands, divide the meatball mixture into 24 portions and shape into balls. Fry the meatballs in a large frying pan sprayed with Fry Light for 5 minutes to brown. Add to the sauce and simmer, covered, for 15 minutes. Serve on a bed of boiled rice or with a selection of Syn-free vegetables.

Slow Cooker Beef Casserole

Serves 4
Syns Per Serving : Extra Easy - 1.5 Syns
Ingredients
• 500gm lean diced casserole beef
• 1kg mixed root vegetables; carrot, swede, leeks, parsnips, etc cut into bite size chunks
• 1ltr beef stock made with 2 stock cubes
• 4 heaped tsp Bisto Best beef gravy granules (4.5 Syns)
• 4 level tsp Bisto powder (2 Syns)
Method
1. Dry fry the beef until browned all over. Put the vegetables in the bottom of the slow cooker, then place the browned beef on top. Pour over the stock and cook on low for 7-9 hours.
2. Half an hour before serving, mix the Bisto powder with a little cold water and add to the slow cooker with the gravy granules. Stir in, then turn the slow cooker up to High for 30 minutes while the casserole thickens.

Coronation Chicken

Serves 2
Syns Per Serving : Extra Easy - Syn-free
Ingredients
• 1pk Batchelors Savoury Rice mild curry flavour
• 1pk Morrisons Savers cooked curried chicken slices (or any other Syn-free cooked chicken slices)
• 1tbsp mild curry powder
• 1 pot Mullerlight mandarin yogurt
Method
1. Cook the rice according to the packet instructions and allow to cool.
2. Chop the chicken into small pieces. Add to the rice with the curry powder and yogurt and mix well. Chill until ready to serve.

Cream Soda Rice Pudding

Serves 1
Syns Per Serving : Extra Easy and Green - Syn-free
Ingredients
• 3 oz pudding rice
• 500ml diet cream soda
• 1 pot Mullerlight yogurt vanilla with chocolate sprinkles
Method
1. Put the rice and soda in a pan and bring to the boil. Reduce the heat and simmer,  stirring regularly, until the rice has absorbed all of the soda. Allow to cool.
2. Stir in the Mullerlight yogurt, mix well and chill until ready to eat.

Easy Peasy Cheesy Pie

Serves 4
Syns Per Serving : Extra Easy and Green - Syn-free
Ingredients
• Fry Light
• 107gm pack Smash cheese and onion flavour
• 1 pack Batchelors Pasta N Sauce cheese and broccoli flavour
• 3 x eggs
• 250gm tub Quark
• freshly ground black pepper
Method
1. Preheat the oven to gas mark 4.
2. Empty the dry Smash and dry Pasta N Sauce into a large bowl. Pour on 3/4pt boiling water and mix well.
3. Whisk the eggs and mix with the Quark and black pepper. Add to the Smash and Pasta N Sauce and mix well again. 
4. Spray a flan dish with Fry Light.  Pour the mixture into the dish and bake in the oven for 45 minutes.

Speedy Chicken Jambalaya

Serves 4
Syns Per Serving : Syn-free on Extra Easy
Ingredients
• Fry Light
• 1 onion, chopped
• 3 garlic cloves, crushed
• 4 skinless, boneless chicken breasts, cut into small chunks
• 350gm dried long-grain rice
• 1 litre hot chicken stock
• 1tsp smoked paprika
• 2tsp dried parsley
• 4tbsp tomato puree
• 1/4 tsp Tabasco sauce
• 1 bottled roasted red pepper in brine, drained
• 1 bay leaf
• 300gm frozen mixed vegetables
• freshly ground black pepper
Method
1. Spray a large, deep non-stick frying pan with Fry Light and place over a high heat. Add the onion, garlic and chicken and stir-fry for 2-3 minutes.
2. Add all of the remaining ingredients to the pan and season well. Bring to the boil then cover the pan and simmer gently for 15-20 minutes or until the stock is almost absorbed and the rice is tender.
3. Remove the bay leaf and serve.

Glazed Pork Medallions

Serves 4
Syns Per Serving : Extra Easy and Original - 2 Syns
Ingredients
• Fry Light
• 1.25lb pork tenderloin, all visible fat removed (I used pork loin medallions)
• 60ml balsamic vinegar
• 2tbsp honey (6 Syns)
• 1tbsp Dijon mustard (1.5 Syns)
Method
1. Preheat the oven to 375°/gas mark 5 and spray a baking sheet with Fry Light.
2. Cut the pork tenderloin into 1 inch thick rounds. Spray a large frying pan or skillet with Fry Light and place over a medium heat. Saute the medallions for 1 minute on each side, then transfer to the baking sheet.
3. Whisk the vinegar, honey and mustard together in a small bowl. Generously brush the medallions with the glaze.
4. Cook in the oven for 10-15 minutes until cooked through. Serve with Syn-free potato wedges and a large mixed salad.

Philly Tuna And Sweetcorn Pasta Bake

Serves 4
Syns Per Serving : Extra Easy - 1.5 Syns plus half a Healthy Extra A choice**
**add 3 Syns per serving if not using the Philadelphia Light as half of your Healthy Extra A choice
Ingredients
• 300gm dried penne pasta
• 150gm Philadelphia Light**
• 200ml vegetable stock
• 180gm tuna, canned in brine or spring water, drained
• 280gm tinned sweetcorn, drained
freshly ground black pepper
• 40gm reduced-fat cheddar, grated (6 Syns)
Method
1. Cook the pasta in a large pan of boilimg water according to the pack instructions.
2. Whilst the pasta is cooking, put the Philly Light in a saucepan with the stock and heat gently until the Philly has melted. Add the tuna and sweetcorn and heat through. Season to taste.
3. Drain the pasta and toss together with the Philly and tuna mixture. Spoon into a warmed oven proof dish and sprinkle with the grated cheese. Place under a preheated grill for a few minutes until golden. Serve immediately with a large mixed salad.

Kheema Curry With Bombay Vegetables

Serves 4
Syns Per Serving : Extra Easy - Syn-free
Ingredients
For the kheema mince:
• Fry Light
• 500gm extra lean minced beef or turkey
• 1 large onion, thinly sliced
• 2tbsp mild curry powder
• 400gm can chopped tomatoes with garlic
• 300ml hot vegetable stock
• 300gm frozen peas
For the Bombay vegetables:
• 4 large potatoes, peeled and cut into chunks
• 200gm savoy cabbage, cored and shredded
• half a teaspoon black mustard seeds
• half a teaspoon mild chilli powder
• half a teaspoon turmeric
Method
1. Spray a large frying pan with Fry Light, add the mince and fry over a high heat for 4-5 minutes, breaking up the mince with the back of a wooden spoon until browned all over.
2. Add the onion and curry powder and cook for a further 2 minutes. Stir in the tomatoes, vegetable stock and peas, bring to the boil and simmer for about 15 minutes.
3. Cook the potatoes in boiling water for 5-6 minutes.
4. Add the cabbage and continue to cook for 4 minutes or until the potatoes are just tender. Drain and set aside.
5. Spray a large frying pan with Fry Light, then add the mustard seeds, chilli powder and turmeric and cook for 20-30 seconds. Tip in the potato mixture and stir until it is evenly coated with the spices.
6. Cook for 3-4 minutes, stirring until heated through, and serve with the kheema mince.

Cowboy Hotpot

Serves 4
Syns Per Serving : Extra Easy - 2 Syns
Ingredients
• 4 large potatoes, peeled and halved
• Fry Light
• 1 large onion, finely chopped
• 2 garlic cloves, crushed
• 8 x Sainsbury's Be Good To Yourself Cumberland sausages (8 Syns)
• 2 large carrots, peeled and finely diced
• 150ml hot vegetable stock
• 400gm can chopped tomatoes
• 415gm can baked beans
• freshly ground black pepper
Method
1. Cook the potatoes in a large pan of boiling water for 10 minutes or until tender. Drain and set aside. While the potatoes are cooking,  cook the sausages under the grill for 10-15 minutes until cooked through.
2. Meanwhile, spray a deep casserole pan with Fry Light, add the onion and garlic and cook for 3-4 minutes. Add the carrots, stock and chopped tomatoes. Bring to the boil, cover and simmer for 15 minutes. Cut each sausage into 4 pieces and add to the pan with the baked beans and cook for a further 5 minutes to heat through.
3. Spoon the sausages and beans into four individual heat-proof serving dishes or a shallow casserole dish. Slice the potatoes and arrange over the top of the sausage mixture. Spray with Fry Light, season well and grill for 2-3 minutes or until browned.
4. Serve hot with a mixed salad.

Scan Bran Cheese And Marmite Loaf

Serves 1

Syns per serving: Syn-free all plans**
**add 5 Syns per serving if not using the Scan Bran as a Healthy Extra B choice, and add 6 Syns if not using the cheese as a Healthy Extra A choice

Ingredients
• 5 x Scan Bran**
• 2tsp Marmite (or more if you love it)
• 3 beaten eggs
• 40gm reduced-fat cheddar, grated**
• freshly ground black pepper
• pinch of dried mixed herbs

Method
1. Soak the Scan Bran with as little hot water as possible. Add the Marmite, eggs, cheese and seasoning and mix well.

2. Pour into a lined 1lb loaf tin and bake in the oven at gas mark 5/180° for 30 minutes.

Philadelphia Chicken Curry

Serves 4
Syns Per Serving : Extra Easy and Original - Syn-free**
**add 3 Syns per serving if not using the Philadelphia Light as part of your Healthy Extra A choice
Ingredients
• Fry Light
• 1 medium onion, finely diced
• 2tbsp mild curry powder
• 4 skinless, boneless chicken breast fillets, cut into chunks
• 150gm Philadelphia Light with garlic and herbs**
• 300ml chicken stock
• 100gm fresh spinach
Method
1. Heat a medium saucepan sprayed with Fry Light and gently fry the onion for 3-4 minutes until softened and starting to brown. Sprinkle over the curry powder and fry for 1-2 minutes over a gentle heat. Add the chicken pieces and cook for 5 minutes, stirring occasionally, until browned all over.
2. Add 300ml chicken stock and bring to the boil,  then reduce the heat and simmer for about 15 minutes. Stir in the Philadelphia Light and warm through. Stir in the spinach and heat gently until the spinach has wilted. Serve.

Slow Cooker Sausage And Bean Casserole

Serves 4
Syns Per Serving : Extra Easy - 2.5 Syns
Ingredients
• Fry Light
• 1 sachet Schwartz Slow Cooker Sausage And Bean Casserole recipe mix (5 Syns)
454gm pack (8 sausages) Sainsbury's Be Good To Yourself Extra Lean Cumberland sausages (4 Syns)
• 1 onion, diced
• 400gm can baked beans in tomato sauce
• 2 x 400gm cans chopped tomatoes
• 150ml water
• 2tbsp tomato puree
Method
1. Brown the sausages in a pan sprayed with Fry Light. Place browned sausages, onion and beans into your slow cooker pot.
2. Mix sachet contents with the chopped tomatoes, water and tomato puree, and add to the slow cooker pot. Stir well.
3. Cover and cook for up to 4 hours on high, or up to 8 hours on low. Keep covered during cooking.
4. Remove lid, stir through and stand for 5 minutes before serving.
